Have you ever tried perry? It’s a delightful aperitif made from perry pears and very traditional to the Welsh Marches. You’ll find it easy going and fun to drink.

Twenty years ago we re-planted three orchards and now they are bearing good crops of fruit. This means we can make perry on our farm. We collect only fallen fruit for maximum ripeness, mill, press and then let nature do its work turning the sugars slowly into alcohol. A few months later it’s bottled and ready to drink. How to mix a Huwie cocktail

20ml elderflower cordial, 20ml dry gin, ice, 25ml soda water, 120ml Cabalva perry

• Pour the elderflower cordial and dry gin into a large wine glass or tumbler.

• Fill the glass with ice, then pour over the soda and Cabalva perry. Stir gently to combine. Garnish with a mint sprig.
